Prepare and grill the chicken souvlaki and tzatziki sauce recipes ahead of time before you assemble the bowls. It can be done a few days ahead of time making this an easy and fast weeknight meal.
Cut the cucumbers, tomatoes, red onion, and olives. Also, warm the rice before assembling the bowls.
To assemble, place one cup of rice in each bowl. Divide the rest of the ingredients between each bowl. Layer on the cucumbers, tomatoes, red onion, olives, hummus, crumbled feta cheese, and tzatziki sauce.
